One Blender Paleo Banana Bread Pie

I used a group of my friends as guinea pigs for this recipe. One of them said, “this tastes like banana bread,” to which everyone else agreed. Thus, the name for this DELICIOUS pie was born.

This is SUPER easy- One blender, that’s all you need to get dirty for this recipe. Throw everything in there and blend it up. Let the oven do the rest.

What’s in it: 

Crust: 

15-18 pitted dates

3 cups raw walnuts

1/2 teaspoon ground cinnamon

Filling:

1/2 cup plus 2 tablespoons coconut sugar (I used this brand)

1/4 cup arrowroot flour/starch (I used this brand)

1/8 teaspoon salt

1/2 cup coconut milk (I used this brand)

5 eggs

2 medium bananas

1/2 teaspoon vanilla

1/2 teaspoon cinnamon

What to do: 

1. Start with the crust. Put all of the crust ingredients in the blender and pulse until it’s all tiny crumbs. It should be almost the consistency of playdoh, and when you grab a handful and squeeze, it should stay together. Very technical description.  If it’s too crumbly, add another date or two.

2. Grab your pie dish (look how beautiful this pie dish is) and start smushing the crust into the pie plate evenly. I covered the bottom and went up the sides as well.

3. Rinse out the blender with just a little water, doesn’t have to be perfectly clean.Then start putting all of the filling ingredients into the blender. Blend them up!

4. Pour the blended filling mixture on top of the pie crust.

5. Bake at 375 degrees for 30 minutes. Allow to cool before enjoying. Easiest paleo pie ever!

*I let my pie cool for about 15 minutes, then I put it in the fridge for 2 hours before we went over to our friend’s house for dinner. It tastes great chilled, but let me know if it’s equally as delicious warm!
